V8 Juice Recipe

Just about everyone I know likes V8 juice.

But, unfortunately, the stuff that comes in the bottles and cans is full of salt and has had most of the life cooked right out of it.

Well, I get around these problems by making my own healthy V8 juice, and you can too.

Read on for two good recipes, one raw and one cooked.

Let's start with my favorite V8 recipe, a raw concoction that's healthy and tasty...

Raw V8 Juice

6 medium-sized carrots
1 small beet (wash well)
3 large tomatoes
1 bag baby spinach
1/4 head fresh cabbage
1 red bell pepper
1 green bell pepper
3 stalks celery
1/4 sweet onion
1/2 clove garlic or less if you don't care for garlic
Kale leaves (a little goes a long way so be careful)
Chili pepper to taste
Salt to taste

Run all the vegetables through your juicer, add salt to taste, and then sit back and enjoy the healthiest V-8 juice around. Tabasco sauce to taste can be substituted for the chili pepper.

For a second recipe, this one cooked, let's turn to...

Tom Solomon's Spicy Hot V8

8 quarts water
4 pounds homegrown tomatoes, chopped
1 bunch celery, chopped
8 green jalapeno peppers, chopped
1 cup vinegar
3 bay leaves
2 Tbs oregano
1 large onion, chopped
1 head garlic, pressed
4 Tbs salt
4 Tbs sugar

In a large pot, combine all ingredients except the sugar, bring to a boil, and cook at a steady boil for 2 hours.

Remove from heat and strain through a relatively fine mesh, making sure to express all the liquid you can.

Discard the pulp, return the liquid to the pot, and boil for another couple of hours, or until the liquid is reduced to roughly three quarts. Add four tablespoons of sugar, remove from heat, stir, and let cool.

Friends, you can't beat either of these two healthy V8 juice recipes for price or for taste!

  1. This is perfect and what I needed! I'm on a stric anti yeast diet for my Candida overgrowth and all I can eat are veggies, veggies, veggies and some fresh meat and grains!

    I was hoping to find another way to eat my veggies and this is perfect! I'd much rather drink them in the morning than eat them. Thanks!

  2. Hey, just to add to what you said, I don't think grain's will be a good idea if you want to rid candida. They have some sugar's too

  3. GREAT RECIPES! As for the Candida - I have the same problem; have had it all my life since childhood. I also found out recently that I have celiac sprue, diabetes, & parasites. Talk about a multiple whammy! I'm having to go raw as much as possible since my body metabolism is basically dead for the last 25 years or so. I appreciate your recipes very much. Keep up the good work on your website. My husband was raised in Rocky Mount, NC, & his family is still there. Shalom & God bless you all richly!

  5. I would like to know if anyone has canned either of these recipes. I am interested in canning them and would like to know processing time. We love V-8 juice and have an abundance of veggies from my garden. Thank-You for any insight you may have. Teresa

  7. teresa, i don't know when you posted your question, but i have canned many tomato products such as canned tomatoes, spagetti sauce, tomato soup, salsa and chili, no beans or meat. my mother canned when i was a kid but she never taught me any basics so that i had to learn on my own. as a rule i have processed the hot tomato based foods for 1/2 hour per quart. the only times i have had any problems was of course when any foods were stuck between the lid and jar or when the jar rim had a chip in it. so far i have had a 99% success rate. i haven't tried canning V8 juice yet but i can't see why it wouldn't be any different than the other tomato based cannings that i have done. i am about to try it, goes great when making stuffed cabbage. gl, Rosebudd

  8. Dana..This is my recipe for Crab soup...1 lb. Crab meat or more..
    1 bottle V8 juice
    2 cans chicken broth
    2 teas salt
    2 table or more old bay
    1 bay leaf
    add together and simmer for 1 hr.
    Then add 1 bag froz mix veg.
    1 bag frozen corn
    Pepper to taste
    cook another 45 mins. and Yummy...

  11. I try to drink all fresh juices within two days of making them. Three at the most. It's very important to store fresh juices in air-tight containers, too. You'll know by the taste when you're reached "Oops, I've stored this too long." The fresher the juice, the better it is for you. More work is required to make juice more often, but the taste and health benefits it are worth it.
