Instant Energy Snack

Hey, if you're one of those people who starts dragging mid-morning and/or late afternoon at work, I have an instant energy snack idea for you today that beats the grease off the oily donuts, sticky candy bars, and sugary coffee or caffeine drinks you're probably using right now.

Why not substitute nasty energy snacks with a healthy energy snack that'll give you a better boost than any junk food, anyway?

Read on to learn one of my favorite recipes for...

Instant Energy Snack Balls

1 cup dried apricots
1 cup dried figs
1 cup dates
1/2 cup raisins
1 cup unsweetened coconut
1/2 cup almond butter
1/2 cup honey

Separate grind apricots, figs, dates, and raisins in a food processor. Add unsweetened coconut. Mix almond butter and honey. Combine the fruit mixture and almond butter mixture. Make into balls and chill in refrigerator.

One warning... think a bit before eating these instant energy snacks around the donut box with your colleagues.

If you do that, everyone's going to be clamoring for the recipe or, more likely, wanting to eat the ones you make when you bring them with you to work.

  1. mmm. This sounds yummy. I can't wait to try it. I experimented with my own version of some raw bars I found at the health food store and thought I would share the recipe here. This is a snack I eat every morning after my daily fruit salad and it keeps me tied over until lunch. Watch out, you'll be addicted quick!

    Granola Bars

    Raw Honey
    Sea Salt
    Raw Almonds
    Raw Cashews
    Raw Sunflower Seeds
    Raw Dried Cranberries
    Ground Flax
    Rolled Oats

    Mix honey and sea salt until well blended.
    Chop nuts and cranberries. Don’t chop too much – just medium size.
    Mix all ingredients into honey/salt mixture until a little sticky.
    Press into a big cookie sheet making it about 1/4 inch thick.
    Cut into 3”x4” bars or whatever size you like.
    Place on dehydrator trays for 24 hours turning over after 12. You can leave on longer if you like them more crispy.

    I don't really ever measure anything but you can make guesses as to how much of anything you need to make it the right consistency. I've also found it helps to put the cookie sheet in the freezer for about twenty minutes to harden the mixture. This makes it easier to cut into squares. Enjoy!

  2. I make snacks similar to yours, Chet, with the addition of some type of crunchy bran cereal...Kashi Good Friends, or sometimes plain old Grape-nuts. I like a little extra crunch.

  3. Hi! this sounds yum! i'm wondering how long they will keep if they are not kept refrigerated? i'm going camping for 2 nights and just wondering if they would go off if not kept in a fridge?
