Healthy Cabbage Salad

Today I'd like to share a healthy cabbage salad recipe that's been a big hit at CasaDay for several years. It's easy to prepare and tastes great.

Indian Cabbage Salad


2 cups thinly shredded cabbage
2 cups shredded carrot
1/2 cup crushed roasted peanuts (or substitute favorite raw nuts)
1/4 cup coconut oil (salad oil is an OK substitute)
1 hot green chili chopped
1/4 cup chopped cilantro
1/2 tsp honey
Lemon juice and salt to taste

Mix everything except salt and lemon - add them only when ready to eat.

  1. There's a very simple, easy-to-make and delicious Indian recipe for cabbage. Takes less than 30 minutes to make.

    What you need:
    1 cabbage
    2 thai chilli peppers
    2 tbsp vegetable or olive oil
    Salt

    Spices: All are optional
    1 tsp asafetida (optional)
    1 tsp turmeric powder
    1 tsp mustard seeds
    1 tsp cumin seeds
    1 tsp red chilli powder

    Procedure:
    1. Chop the cabbage into 1-2 inch blocks. Chop the thai peppers if using them.
    2. Heat oil in a pan 3. Add asafetida, mustard seeds, cumin seeds and let them pop in the heating oil.
    4. Add the thai peppers.
    5. Sprinkle turmeric powder into this.
    6. Mix this seasoning up. You may want to lower the heat to medium.
    7. Add the chopped cabbage.
    8. Add salt as desired, and the red chili powder if using it. Mix well till the turmeric powder stains the cabbage evenly.
    8. Cover with a cool lid. I periodically cool the lid with cold water from the sink. This helps the cabbage cook well in its own nutritious juices.
    9. Cook till cabbage is soft, occasionally opening the lid and stirring.
    10. Eat with Indian flatbread, any other kind of bread, or by itself. Ummm, DELICIOUS!

  2. Very Easy Quick Summer Salad Slice Cabbage about 1/4" thick pieces I use red onion,but use what ever you like! Also portion your amounts of each to your liking. Then slice/dice fresh tomatoes (your choice) I like Italian tomatoes... Sprinkle Parmesan cheese, top with extra virgin olive oil,and non filtered apple cider vinegar.. Ground pepper, salt if you like.. Its a very tasty refreshing salad for hot summer days, takes about 5 minutes!
